The construction of modern cold storage in China began in the early 20th century. At present, large and medium-sized cities have a considerable number of cold storages with increasing capacity. In addition, with the development of controlled atmosphere storage technology, controlled atmosphere refrigeration has emerged. Vacuum refrigerators that can create a low-pressure, high-humidity environment are also being researched and designed.

Cold storage maintenance: 1. Foods containing a certain amount of fat, protein and starch are generally stored in cold storage. Mold and bacteria reproduce and grow because of the presence of these nutrients. Therefore, for hygienic management and to improve the quality of these ingredients stored in cold storage, it is necessary to carry out regular cold water sanitation and disinfection work. Acidic disinfectants can be used for mold removal and disinfection in cold storage. The bactericidal effect of acidic disinfectants is mainly to coagulate proteins in bacteria. Commonly used disinfectants include lactic acid, peroxyacid, formalin, etc.

2. Methods to eliminate cold storage odor:

1. Causes of odor in refrigeration. The so-called odor refers to the abnormal odor produced by physical and chemical changes in cooking materials and food in refrigeration under the influence of external factors. Over time, this odor can stick to the walls, ceilings, equipment, and tools of the cold storage.

2. Refrigerated food needs to be inspected before being put into storage without deterioration.

3. Ozone method eliminates odor in cold storage. Ozone, which has a strong oxidizing effect, can not only effectively remove the odor of cold storage, but also prevent the growth of microorganisms. If there are a lot of high-fat foods in the cold storage, do not use ozone treatment to avoid rancidity caused by fat oxidation.

Cold storage maintenance:

1. The cold storage should be used again after installation or long-term stoppage, and the cooling speed should be reasonable.

2. When repairing the refrigeration board, pay attention to collisions and scratches on the warehouse body when using hard objects. Because it will cause dents and corrosion of the warehouse board, it will seriously reduce the local thermal insulation performance of the warehouse.

3. Maintenance of cold storage sealing parts. Since the prefabricated cold storage is composed of several insulation boards, there is a certain gap between the boards, which will be sealed with sealant during construction to prevent air and moisture from entering. Therefore, some parts with seal failure should be repaired in time during use. 4. Maintenance of cold storage floors. The floor of small prefabricated cold storage generally uses insulation boards. When using cold storage, large amounts of ice and water accumulation on the ground should be prevented. If there is ice, do not hit it with hard objects when cleaning to avoid damaging the floor.
